Teriyaki Chicken of the Woods Recipe
Enjoy healthy, nutritious Chicken of the Woods in stir-fry teriyaki.
Here’s my Teriyaki Chicken of the Woods recipe.
Our old oak tree we call “The Old Woman of the Woods” has some Chicken of the Woods mushroom growing at her base this season. Unfortunately, this means she’s probably dying, rotting inside, and has the potential to blow over. She’s not in a spot that will cause any damage. There are a couple trees around her which we hope will shelter her for as long as possible. It is very sad for us to realize that our dear friend’s days are numbered.
On the upside, she’s offered us a nutritious gift that has a plethora of healing properties including research that shows Chicken of the Woods can reduce the growth of and even kill breast cancer, stomach cancer, lung cancer, liver cancer, leukemia and more. We’ve harvested over 10 pounds of Chicken of the Woods in the last week. This is a delicacy mushroom that can sell for up to $20/pound in the store. After doing a lot of reading and research and asking people who are more expert than we are, we made sure that this is indeed Chicken of the Woods and that any lookalike wouldn’t be toxic.
Preparing and Eating Chicken of the Woods
We sautéed some one evening and tried a small amount to see how our bodies reacted. You need to cook it for at least 15 minutes to make sure it’s well done.
It tasted good, and we had no ill effects. A couple nights later we made some Tom Kha Gai soup using the Chicken of the Woods in lieu of chicken and regular mushrooms. It was delicious! Again, no ill effects.
Today, I made some teriyaki stir fry. Oh my! So, so delicious! Here’s my recipe.
Ingredients for Teriyaki Chicken of the Woods
- 1/3 pound of diced Chicken of the Woods
- 1/4 – 1/2 cup soy sauce or Tamari
- 1-2 tsp diced ginger
- 1 diced green onion
- 3-4 diced mini bell peppers
- 1 tsp minced garlic
- 1 TBSP coconut sugar
- 2 Swiss chard leaves with stems chopped
- 1 tsp Sesame Oil
- 8 ounces of diced pineapple
- Coconut oil as needed
Step 1
Mix diced onions, garlic, ginger with soy sauce (or Tamari), 2 TBSP pineapple juice, coconut sugar in a small bowl.
Step 2
Marinate diced chicken of the woods in the teriyaki sauce for 15 minutes. Set aside a little of the sauce to marinate the remaining vegetables separately.
Step 3
Sauté the chicken of the woods in the coconut oil and sesame oil for 15 minutes. Stir frequently. IMPORTANT: You need to cook Chicken of the Woods at least 15 minutes so it’s cooked through.
Step 4
While you’re sautéing the Chicken of the Woods, blend the Swiss chard, peppers and the teriyaki marinade you set aside and let marinate.
Step 5
Add the pineapple and vegetables to the cooked Chicken of the Woods and stir fry for another 5 minutes or until the vegetables are as you like them.
Step 6
Serve stir fry over rice and enjoy!
