Healthy, Delicious Cran Apple Crisp
I love to create healthy dessert recipes that use fresh fruit and have no processed sugar added. We bought a half-bushel of Granny Smith Apples in Elijah, Georgia a couple weeks ago. Unfortunately, they are a bit on the bland side. Whenever I’ve cooked them, they haven’t tasted that great. They just aren’t flavorful or tart enough. So, I decided to kick them up a notch with some fresh whole cranberries and orange juice. Oh my! So delicious!
Here’s my healthy recipe for Cran Apple Crisp. I use Monk fruit and dates as sweeteners.
Filling
- 5 Granny Smith Apples
- 4 ounces fresh whole cranberries
- 1/4 – 1/3 cup orange juice
- 1/2 cup monk fruit
- 1 TBSP butter
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Tiny pinch of salt
Bring ingredients to a boil in a medium saucepan and let it cook until the berries and apples are tender. Then add the vanilla.
- 1 tsp vanilla
Pour the mixture into a deep-dish pie pan.
Topping
- 1 cup oatmeal
- 5 medjool dates
Chop the oatmeal and dates in a food processor until the dates are chopped up and mixed into the oatmeal.
Add the following ingredients to the oatmeal/date mixture:
- 1/4 cup butter
- 1/3 cup monkfruit
- 1/2 teaspoon cinnamon
- Pinch of salt
Mix in food processor until blended.
Distribute the topping on top of the cranberry – apple mixture. Bake at 400 degrees Fahrenheit for 15 minutes. Then reduce the heat to 350 degrees Fahrenheit and cook for another 5 minutes or until the topping is golden brown.
This is a tart recipe, so you may wish top it with whipping cream or non-dairy topping or ice cream. SO Delicious Dairy Free Ice Cream is a good choice – especially one of their No Sugar Added options.
