Fast & Delicious Cherry Pecan Pie
Recipe for fast and delicious cherry pecan pie. Assemble in about 5-10 minutes, bake for 30 minutes.
Serve plain warm or cold with or without ice cream.
I had some leftover pie crust dough in the fridge from Thanksgiving. Before it went bad, I decided to make a quick pie. I made up this recipe on the fly for Cherry Pecan Pie; and it’s fast and delicious. Super easy.
Directions for Fast and Delicious Cherry Pecan Pie
After rolling out the pie crust and putting it in the pan, pour one can of cherry pie filling in the pie crust and spread it out. Then chop about 6 large pitted medjool dates with about 1/2 cup pecans in the food processor until it is chopped and mixed.
Top the cherry pie filling with the chopped dates and pecans, spreading the topping evenly over the pie filling. Then put about 3 TBSP worth of butter (sliced thin in little pats) and arrange those over the top of the pecan/date topping.
Bake the cherry pecan pie at about 360 degrees F for 30 minute until golden brown. So good!
Ingredients for Fast and Delicious Cherry Pecan Pie
- 1 pie crust
- 1 can of cherry pie filling
- 1/2 cup pecan pieces
- 6 large medjool dates
- 3 TBSP butter
Assemble as directed above and bake at 360 degrees F for about 30 minutes (or until golden brown). Serve warm with vanilla ice cream if you wish. We just ate ours warm without any ice cream and it was delicious.
